This place is mostly a tourist attraction, being on Via Maqueda, the hub of Palermo's nightlife. Despite this, I had an excellent Parmatto pizza with Parma ham (not raw, mind you; they also offer Parma ham), made with their signature dough, left to rise for 72 hours and made with three types of flour: Russello, Tumminia, and Perciasacchi. I highly recommend it.

Super-stocked bar/bakery on the main road.
They make exceptional almond paste desserts, and their savory baked goods are also a must-try.
There are plenty of outdoor seating.
The waiters seem a bit aloof, but they're professional and friendly.

Pizza and pasta were delicious, the pizza base was crispy and fresh, and the toppings were plentiful and made with fresh ingredients.
We ate there twice last week (Friday, our last evening in Palermo) because, among other things, it impressed us with its taste, value for money, and friendly, attentive service. It is truly highly recommended.
