Today I chose spaghetti with garlic and oil and raw scampi: it sounds simple, but there's extraordinary work behind it. The spaghetti is Cocco, cooked to perfection, but what's truly surprising is the base: a creamy, enveloping base with orange hues that replaces the usual oil. The garlic cream adds intensity and depth, without ever overpowering the delicate flavor of the scampi. A balanced, elegant dish, crafted with intelligence and sensitivity.
