I had never tried fried gyoza and I have to be honest they were a pleasant surprise. As for the Ramen, I found it to be of quality with excellent ingredients, but I don't know why I didn't find the broth too tasty compared to past experiences. Nonetheless, I think the restaurant is very good if you are in the center of Bologna. However, I recommend arriving not too late as the place is small and does not accept reservations.

Their regular ramen was too salty while the wagyu option just seemed like a waste of good meat.

Not yet, I haven't visited all the ramen stores in Bologna.
But in my opinion, this ramen store is probably number one in Bologna.

Ramen was not as good as what I had eaten in Japan but compared to most ramen places in Italy it was closer to the Japanese style🙆♂️
This is definitely the best ramen I've had so far in Italy.
I got the one with duck and it was pretty good, I can't wait to try the Wagyu one!

The quality has dropped drastically during the change of management, the menu has remained approximately the same but the richness of flavors of the broths and ingredients is a completely different thing and you can immediately notice it.
Furthermore, the service is extremely hasty, with little care in hospitality, the aim is to take in as many people as possible and make them stay for a short time to create as much turnover as possible.
Let's say it's worth trying once and that's it.

Da tempo volevamo provare questo ramen bar, ci siamo andati un sabato di inizio novembre. Le sedute sono un po’ anguste, si sta sugli sgabelli, ma è sicuramente caratteristico e piacevole poter mangiare vista cucina. Abbiamo preso due ramen Tokyo e dei ravioli alla piastra. Tutto molto buono. Personale gentilissimo che, a seguito di un malinteso (penso di aver preso il ramen destinato ad un altro cliente, con la conseguenza che hanno dovuto rifare sia il mio che il suo), ha deciso di offrirci i ravioli. Totale con una bottiglia d’acqua 32€. Consigliato.
