The quality has dropped drastically during the change of management, the menu has remained approximately the same but the richness of flavors of the broths and ingredients is a completely different thing and you can immediately notice it.
Furthermore, the service is extremely hasty, with little care in hospitality, the aim is to take in as many people as possible and make them stay for a short time to create as much turnover as possible.
Let's say it's worth trying once and that's it.

I went alone to eat Ramen and I managed to sit down immediately, but with the no-reservation formula I think that for groups of 3/4 people there will certainly be a longer wait. However the service is fast.
The ramen had a strange smell, honestly not the best I've eaten but it was ok over all, nothing special at all. I ate sitting next to other people and it was a bit terrible because there isn't any living space so if it bothers you to have people crowded around you it's not the best, but it's certainly part of the "ramen bar" formula that is there.
They don't accept cash.

Delicious discovery on this cold and rainy late winter day.
Delicious broth and firm noodles, I would recommend roasting the pork belly on both sides for a complete maillard.
Music a little loud for my tastes, but pleasant melodies.
I couldn't have asked for a better lunch on this gloomy day.

The best ramen in Bologna.
Super recommended, friendly and knowledgeable staff, the place is small but there is a nice atmosphere. They don't take reservations, but the line generally runs very smoothly. I have been there several times and they have never disappointed. The gyoza are also highly recommended.

I've been a regular customer for years now, everything is always impeccable, it's really a shame only for the chef who forgets the extra noodles every time, he has to be reminded of them on time and they arrive when I've run out of broth.

The "without reservation" formula is interesting for those who want to have a quick and hot meal. Honestly, though, I expected something more from the ramen itself. I took the wagyu ramen which certainly had a very good broth and meat, but the remaining dish was meager in quantity and not of great quality (noodles definitely not made by them). It's a shame, because with a plate of €26 you almost wake up still hungry (and I'm not that big of a glutton).
Very fast service and very kind guys, but prices a little too high for the dishes offered and the place which in any case does not recall Japan at all.

Tasty broth, soft meat and egg 🤤.
I recommend going quite early because there is always a long queue outside the venue.
A few steps away from the venue there is also my favorite Irish pub (Madigan's) where there are never too many people and the staff is super friendly!

The ramen in Bologna is Sentaku Ramen Bar. Absolutely the best around. The place is small and, especially on weekends, it is recommended to arrive a little before the usual 9pm. It rightly doesn't accept reservations but, especially for small groups of up to 4 people, the queue flows well. Don't expect a very big place, you eat practically at the counter but this is also part of the experience. We also had some appetizers but generally with just a portion of Ramen we can be very full. Possibility of vegetarian ramen. Highly recommended.
