First experience at the Bistrot with family in tow. A 3 minute walk from the Theatre, open kitchen and in good weather a beautiful internal courtyard to enjoy. Very nice location, perhaps a little soporific in the music/color combo. Basic but complete menu of both meat and fish. We went for a good beef joke and some excellent parmesan and truffle cappelletti. The second course was the Rossini fillet with fois gras, and the sirloin with artichokes was also good. I particularly liked the wine list, lots of natures and high quality. Promoted. To return.

Cooking as an art in motion
At Rossini Bistrot in Pesaro, cooking is a living art, in constant transformation. The octopus emulsion, which sublimates into an intense and luminous mayonnaise, tells the philosophy of the place from the first taste: solid technique and conscious creativity.
The egg cooked at 63°C, placed on a chickpea cream with crispy bacon, expresses with refined elegance the mastery of low-temperature cooking. The tartare with asparagus is fresh and vibrant, while the tonnarelli with cuttlefish, peas and lemon surprise with the perfect balance between sea and garden. The cappelletto with truffle is simply sublime, a hymn to tradition revisited with respect and lightness.
The octopus, served on a cream of Jerusalem artichoke and the aforementioned octopus mayonnaise, deserves applause: soft, intense, impeccably cooked. Even the meat defends itself with personality: the fillet with artichokes conquers with harmony and precision in its flavors.
Chapter desserts: those who, like the writer, are not fans of the Easter dove, here are surprised by a surprisingly pleasant version. The Bavarian cheese and pear cream is also excellent, well balanced between sweetness and acidity.
The wine list, although not very extensive, is carefully thought out: a tribute to the Marche, with French incursions. It could perhaps dare more in the Italian panorama, but the selection remains credible and in line with the philosophy of the bistro. We tasted a local bubble of Sangiovese - the Rubinia 2019 Marche Rosso IGT de La Staffa - and La Valle del Sole Piceno Superiore. If the bubble did not totally convince in its exuberance, it was still interesting to appreciate the RUBINIA with an unexpected vinification exclusively in cement, capable of offering food for thought.
The service proved to be attentive, smiling and competent. The open kitchen is much appreciated, allowing you to admire the workers at work, in a silent ballet of technique and passion.
Rossini Bistrot confirms that in Pesaro the cuisine can be high, modern and, above all, exciting.

Exceptional food, very knowledgeable and courteous staff, a really nice place with thoughtful furnishings. If I'm in the area again I will definitely return! All the dishes were really good, perhaps my favorite was the fillet with foie gras, exquisite! Absolutely recommended!

Serata con due amiche , era la prima volta in questo locale. Giusta atmosfera , cibo buonissimo e ottimo servizio.Al momento del conto ci accorgiamo che hanno messo una bottiglia di acqua in più, quindi al tavolo facciamo i conti togliendo l'acqua in più dividiamo per tre e andiamo alla cassa .Al momento di pagare ho fatto presente la cosa alla signora alla cassa del disguido. Paghiamo e mentre stiamo uscendo avevamo ancora la porta aperta , la signora rivolgendosi al cameriere ha detto , con aria infastidita MI HANNO FATTO TOGLIERE UN EURO!! non si fa così anche se cifra era irrisoria avrebbe dovuto scusarsi e soprattutto i commenti si fanno quando sei sicuro di non essere ascoltato .Morale MAI PIÙ!!!

Everything perfect. Cozy place located along one of the main streets of the centre. Interesting menu with non-trivial proposals. Impeccable and fast but never intrusive service. Excellent homemade bread. A little welcome from the chef to start. The two of us had duck salad as a starter, stuffed paccheri as a first course and stuffed quail as a second course with a vegetable terrine as a side dish. All individual portions to be divided into two. To finish, a strudel and a tartlet with eggnog and chestnut cream and persimmon puree. A glass of wine. Excellent flavors and very visually beautiful dishes. Everything perfect. Cost appropriate to the quality of the dishes.
