I come to this restaurant quite often.
The menu, as always, features traditional dishes made with local and seasonal products, such as chestnuts in the winter.
The two of us chose: orange and dried fruit salad, suckling pig with roast potatoes, baked scamorza cheese with porcini mushrooms, ricotta and cinnamon mousse, and chocolate sbrisolona.
The friendly service is also noteworthy.
I forgot to mention an added bonus: coffee is served in the owners' grandmother's "good service" cups (see photo).

The atmosphere was warm, but the staff was a bit cold. The owner, despite us being the only table (it was 12:30, a bit early!), didn't pay much attention to us. She preferred to look at her phone, which made us feel awkward, and we had to speak softly so as not to disturb her! The food was good, but nothing special, and the portions were small. I expected a warmer, more engaging experience to savor the flavors of Viterbo; perhaps I had too many expectations. I wouldn't return.

The restaurant doesn't offer completely gluten-free cuisine, but the staff is very attentive and helpful. I ordered a vegetable soup and had no problems: it's a good compromise for those who, like me, are gluten-conscious. Definitely a good option in the heart of the city's historic center!

Everything was very good, it's a shame that when we were eating outside, there were people at the nearby tables who would light up a cigarette every time a dish arrived and we started eating, giving a final smoky aroma to all the dishes that we would have happily enjoyed "natural", but here we are talking about personal education, they had every right to smoke.

We visited this restaurant in August after many years. Perhaps a little disappointed because the menu didn't seem very varied. The venue remained the same. The prices, however, have been updated.

In the center of Viterbo, a historic restaurant where fine dining is served with all the trimmings.
A welcoming place with the option of dining outside... but the interior was truly beautiful, so we dined there!
Giuliano's kindness won us over, leading us by the hand, with professionalism and discretion, through Viterbo cuisine.
The "paccheri with cherry tomatoes and stracchino" were delicious, as were the "grilled porcini mushrooms," the "rosemary-flavored beef steak," and the "Viterbo-style chicken." Even the simple mixed salad was top-notch.
Last but not least, the house desserts: the "ricotta with peaches and salted caramel" and the "crumbled cake with hazelnut cream."
If you go to Viterbo, you can't miss TRE RE.
