At the counter, Francesco and two other generations assemble tasty salads with the best cuts of tripe: not only foot and snout, but also centopelle, zizza (udder), spicy snout and matrix (uterus), accompanied by thin slices of fennel, olives greens and lupins. Depending on the size, the trays cost 5 (for one person), 10 or 15 euros. To wash it down, a cold beer is best. The interior is simple, with a few wooden tables and a single wooden toothpick for cutlery. The place is ideal for a fun evening with friends, but be careful because there is already a crowd at 4pm, their opening time. It goes without saying that snout and other offal are very fresh and delicious. There is no cover charge, so the bill is what you pay.
