Superlative experience at Alibi. We chose the 4 steps tasting menu, and every dish was an explosion of flavor. Excellent quality ingredients and beautiful presentation. The staff is professional and friendly, and the atmosphere is elegant and intimate. Excellent value. We had a wonderful time and will definitely return to try the other items on the menu.

One of the most interesting features is the use of sauces and reductions: authentic in flavor, precise in balance, never overpowering. They are designed to complement and enhance the ingredients, not mask them. The reductions have an aromatic concentration that speaks to the work in the kitchen, with carefully measured savory and acidic notes, hints of the sea and the countryside, and nuances that amplify the flavor without overpowering it. Each dish finds its own "color" thanks to these consistent and balanced flavor strokes. Overall, the dishes are well-executed: careful cooking, respected textures, and clean aromas. Of all the dishes, my favorite was the calamari appetizer, "reminiscent of stuffed calamari." Balanced in texture, tender yet with just the right amount of firmness, it's enhanced by a sauce that complements its natural sweetness. Subtle contrasts of crunchiness and freshness complete the bite, making it memorable and perfectly balanced. Professional service and well-paced dining experience, along with a wine list designed to complement the cuisine, with labels that enhance the experience without being pretentious. In short, 131 is a restaurant where technique and authenticity meet thanks to Chef Alice, of Abruzzo and Lazio origins, and Chef Liborio, a Sicilian. Welcoming and tastefully decorated restaurant, delicious food, carefully prepared, friendly staff, we had a great time. The only negative note, but perhaps we were wrong, was that we didn't find the wine pairings particularly satisfying.
