After Nesto I will have to revisit many of them because many of my culinary certainties seem much less solid. I will certainly never take Nesto's stars away, he has set a standard that will last forever. It is possible, but difficult, that one day I will try equally good or better dishes but I will certainly not feel like a guest like at Nesto.
