A place just steps from Termini where vegan cuisine meets Roman tradition... and does so surprisingly well.
We tried some truly interesting dishes: from the 3D-printed "meat" to the vegan carbonara. And yes, for once we can say without fear: it's a carbonara. The flavor and texture truly evoke the original, despite what purists claim.
The tiramisu was also excellent: perhaps slightly more bitter than the classic, but still faithful and very enjoyable.
A very positive note was the presence of kombucha, a drink I often drink in the United States and not so common in Italy. In this case, it was also very good and not very sweet.
Good service overall. The only small flaw: the cappuccino. I would have appreciated more plant-based milk choices (oat, rice, etc.), but only soy was available, perhaps the least interesting of the options.
Overall, though, it's a worthwhile experience: innovative, tasty, and capable of satisfying even the most skeptical.

Amazing vegan Roman cuisine! I had spaghetti carbonara, 3D-printed vegan meat, and also tiramisu and cheesecake. Everything was absolutely delicious. This is one of my favorite places, and even non-vegans love it because the food is just incredibly good!

Delicious choice to say goodbye to this very pleasant trip
We went at brunch time and at snack time to have the last bite before boarding the plane
First time I've tasted a vegan cheese and cold cuts tray. How good!
The fried rice balls, a choice to satisfy
The stuffed olives, oysters what a discovery! They are very good
The hummus with crudités came in fresh and light
You have to order the focaccia! It's the finest. It goes in well. It's different
Everything is very good

As a vegetarian, this restaurant has probably served the best vegan food I have ever had. I typically hate vegan cheese, but the Cacio E Pepe I had from here was delicious. However, I was under the impression that this restaurant served both vegan, and meat options, so it was a little awkward to dine with my family. Just a heads up! ✌️

I was at Rifugio Romano yesterday for the second time, and I can say it's become one of my favorite places in Rome. The dishes are carefully crafted, tasty, and made with great attention to detail. You can clearly taste all the hard work, planning, and dedication that goes into creating such a project. The service is fast and very pleasant: the waiters are kind, attentive, and make you feel truly welcomed. The menu offers a wide and interesting selection, with so many options that make you want to return time and time again. It's become a true go-to for me, and I'll definitely be back again, especially since I'm aiming to try the entire menu.

The gricia was good; honestly, I had to give the "meat" to my boyfriend because it was shocking how much it tasted like real meat, despite being vegan.
My boyfriend really enjoyed the carbonara.
The tiramisu was very dense, heavier than usual.

Just steps from Termini Station, a truly extensive and high-quality menu (all vegetarian, of course).
We had Ascoli olives, delicious fried mushrooms, saltimbocca alla romana, cacio e pepe, and even dessert. Everything was excellent, prices were average, and the service was quick and friendly.
