#solopostidimangio 2025 - Brixen Recently, returning from Germany, I had the pleasure of visiting the Fink restaurant, completely renovated in 2023. I must say that they have maintained a high standard of quality that is difficult to match. Their motto, "Alles neu... so wie früher" or "everything new... as before", perfectly describes the balance they have achieved between tradition and innovation. Located in the heart of the historic center of Bressanone, Fink is a place where the value of tradition opens up to innovation with sustainable thinking and action. As stated in their flyer, "Fink cuisine draws inspiration from the wisdom of monastic culinary art", and this philosophy is fully reflected in their dishes. Simplicity, authenticity and healthiness are at the heart of their culinary offering, always using fresh seasonal ingredients. The restaurant not only offers a welcoming and modern environment, but also a unique dining experience that celebrates both historical roots and new gastronomic trends. I highly recommend a visit to anyone who wants to enjoy delicious dishes in a context that respects and values ​​sustainability and innovation.

We lived here for a week and a half and really enjoyed it. The rooms are beautiful, lots of wood, but still very bright, good beds, nice bathrooms. Sauna facility is very nice. The breakfast is terrific. The dinners were also very high quality and delicious. Lots of regional food. Very well processed. Top starting point for hikes in the mountains. We are very happy all around.

I returned for the first time after the renovation of the structure. Location with a minimal but welcoming taste, very well-kept and fine. Absolutely exceptional lunch, high-quality raw materials and impeccable preparations. From the appetizer to the dessert, I was truly enchanted. Excellent service. It had been a long time since I had been so satisfied. Absolutely perfect.

Habe allein gespeist. Schöner langgezogener Speisesaal, direkt unter den Lauben. Designmäßig sehr ansprechend. Hatte 3 Gänge. Alle vorzüglich! Risotto aus Tramin, Buchweizenteigtaschen mit Roter Bete, Roggener Schlutzer mit Schwarzplentenem Knödel. Schlne glasweise Weinauswahl auch für Alleinreisende. Das alllllereinzige, was mich etwas gestört hat, waren die 3 Euro Coperto/Gedeck. Ich finde, dass so etwas im Haubenniveau-Bereich nicht notwendig ist. Es tat dem schönen Kulinarikabend eber keinen Abbruch. Sehr sehr aufmerksamer Service!

We had been to this restaurant years ago, we had a great time. The restaurant is still very characteristic, now definitely more refined. The menu has changed almost completely, but overall we had a good time. Very efficient but discreet staff. The price is not exactly cheap, but the address they gave the restaurant makes it understandable.

A true jewel in the heart of Brixen – pure relaxation, enjoyment and hospitality! Our stay at the Fink Hotel was a completely special and perfect experience from start to finish. As soon as we arrived we received an incredibly warm welcome - the service is not only professional, but also very attentive and full of passion for what they do. You really feel welcome and well looked after here. The spa area is an absolute highlight: inspired by Roman bathing culture, with stylish design, soothing water pools and an ambience that immediately invites you to deep relaxation. Particularly impressive is the cold water pool with a view of the sky, which is reminiscent of the ancient frigidarium - a true experience for body and mind. The Fink Hotel also has something very special to offer in terms of cuisine. The kitchen follows the principles of Hildegard von Bingen and focuses on healthy, soothing and wholesome dishes. Each dish not only tastes excellent and intense thanks to local products, but is also aimed at strengthening the body and well-being. A wonderful combination of enjoyment and health! The location couldn't be better either - right in the heart of Brixen, perfect for exploring the city and beyond. The well-known photo spot with the church of St. Johann in Val di Funes is also only a 25-minute drive away - and can even be easily reached by bus from the hotel. Despite its central location, the hotel is still a real oasis of peace. Whether for a short stopover, weekend trip or longer vacation - it is an absolute recommendation from us!

The care and attention to the South Tyrolean culinary tradition, revisited in a modern key, and the use of the highest quality products, made our dinner a true culinary experience. Gourmet dinner with impeccable service. I rediscovered them after their transformation and renovation and it was a pleasant rediscovery.

A small hotel with special rooms and particularly good service. The food in the restaurant is also excellent. My absolute recommendation for this hotel and especially for the particularly good restaurant.

We were in the restaurant. We always eat particularly well and have very attentive, friendly service. We are particularly pleased that mainly vegetarian and also some vegan dishes are offered. There is always a smaller menu with meat and fish dishes. Prices tend to be on the higher end.

Locale raffinato, Personale educato e disponibile Pietanze eccellenti. Abbiamo voluto assaggiare il Duetto Berg-Lamm, un sapore veramente Buono. L'unica pecca i gnocchetti erano 5 di numero, forse ne occorreva qualcuno in più.
