06/05/2025: I spent a memorable evening at Sa Tanca Crostaceria in Via Palermo 57, in the heart of Rome's Rione Monti, where every detail contributes to an unforgettable sea experience. Environment The furnishings mix contemporary elegance and marine references, with warm lights, light wood details and precious baroque elements that make the atmosphere both intimate and refined. Staff Paola welcomed me with a sunny smile, illustrating the house specialties with grace and competence. Cristiano, the waiter, made the difference: he served each course with professionalism and personally took care of cleaning the sea bass, ensuring a perfect presentation. Gastronomic experience The caliber 0 oyster I tasted turned out to be the best ever: fleshy, with a perfect balance of salinity and mineral aftertaste, an authentic expression of marine freshness. The sea bass, filleted at the table by Cristiano, was very tender with just the right amount of crispy skin; baking, lightly flavored with extra virgin olive oil, enhanced the natural sweetness of the fish. The itinerary is completed by dishes such as fregula with lobster, with an intense bisque flavour, and seadas with warm honey, which closes the meal with a pleasant sweet-savoury contrast.
