Pizzeria Un Giorno All'Improvviso In Livorno

When talking about a pizza and giving an opinion after eating it, there's a lot of subjectivity regarding the dough, whether it's thin or thick, the crust or not, the mozzarella, the tomato, and ultimately, digestibility. In my opinion, and having eaten thousands of pizzas, I found this to be an EXCELLENT pizza: excellent dough, very flavorful, well-cooked to the right degree, and last but not least, cooked in a wood-fired oven, where, contrary to what you might think, the temperature constantly fluctuates. In an electric oven, however, it remains almost constant, which is what makes for a good, digestible pizza.
