Pizzeria Triticum In Polignano a mare

We stumbled upon it almost by chance last week and it was a delightful surprise! All three of us had the pizza of the month and it was sublime! Quality ingredients and top-notch multigrain dough. Well-made, beautifully textured, and very digestible. As a former pizza chef, it's always nice to find knowledgeable people who put so much passion and professionalism into making pizza; I could feel it in every bite! The atmosphere was lovely and well-maintained, and the service was fast. We'll be back and highly recommend it!

If you're a tourist who doesn't feel like fighting over a seat on Via Roma, this is the ideal "insider tip." It's a bit out of the way from the center, but the value for money is really great. The pizza was delicious. The background music is a bit loud. Many people also come here to pick up their pizza.

Good pizza and appetizers, service needs to be improved

It was recommended to me by friends. We went on August 2nd to celebrate my sister's 60th birthday. 🥰 Large space, excellent and non-invasive service, very kind owners, excellent food. 😋😋😋

We went to this pizzeria last night. The pizza was truly delicious and had a unique flavor. Greetings from Sicily.

We'd heard good things about this pizzeria, so we decided to try it in Monopoli: our expectations were pleasantly confirmed. The interior is tastefully decorated, although since it was the height of summer, we dined outside, where the furnishings were equally thoughtful. The four of us ordered fritters, served with delicious sauces, and pizzas: the dough is Neapolitan but highly digestible, thanks to its well-leavened crust, the ingredients are top-quality, and the combinations are original and successful (I recommend the Triticum, truly special!). Finally, the service is always attentive and courteous, never intrusive. It's run by a team of young people, and I hope they continue to do so! We'll become regulars at this fantastic place! A full star rating for a place that welcomed and pampered us in the best possible way. Warm welcome and impeccable service. The staff were competent, serious, and truly attentive. Quality food: we ordered a Triticum appetizer, delicious and plentiful. We had a Margherita with ham and mushrooms and a buffalo mozzarella. Truly excellent. Antonio, one of the two managers and pizza chef, takes care of every ingredient, slicing the cured meats for your pizza on the spot. The mushrooms were incredibly fresh, definitely picked that day. These little treats instantly make a difference. Kudos to the entire staff, superbly coordinated by Antonio and Vito. Keep up the good work. We'll be back soon.
