The Margherita pizza I recently enjoyed was a true revelation - an ode to the art of pizza making. It was clear at first sight that a master was at work here. The dough, thin yet sturdy, had risen perfectly and was framed by a golden brown crust that crackled promisingly when cut.
The scent that wafted towards me when I picked up the first piece was tempting: a harmonious mix of fruity tomato sauce, the delicate aroma of freshly picked basil and the tempting spice of melted mozzarella. Every bite was a journey to the cradle of pizza – Naples.
The tomato sauce, made from sun-ripened San Marzano tomatoes, balanced perfectly between sweet fruitiness and a subtle acidity. It was applied lightly so that the dough could still breathe and not drown in liquid. The mozzarella, of the highest quality, melted evenly and formed creamy pools on the surface without appearing too oily.
Of particular note is the basil: fresh and fragrant, it added not only color but also a lively, herbal note that rounded off the overall impression. Every ingredient was exquisite and in perfect balance - nothing dominated, everything complemented each other in a harmonious way.
However, what truly made this pizza the best margherita I've ever enjoyed was the attention to detail and craftsmanship that was evident at every stage of the baking process. The dough was crispy on the outside, airy on the inside and had that subtle, slightly sour note that can only be achieved by cooking the dough for a long time.
This Margherita was much more than just a simple dish; it was an embodiment of Italian tradition, prepared with a dedication that was second to none. An experience that will be remembered - and sets the standard for all future pizzas.

Pizzeria rustica e molto frequentata.
Si può prenotare ed è meglio se non si vogliono fare lunghe attese.
Il servizio è affidato a giovani molto scattanti e simpatici.
Al forno tre pizzaioli garantiscono attese giuste.
La pizza è ben condita, con prodotti di buona qualità.
L'impasto,ahimè, è piuttosto ciccoso, la maglia glutinica è molto resistente già al taglio con il coltello e dopo 5 minuti bisogna ' strappare '; la digestione quindi potrebbe essere un po' impegnativa.
Questo impasto mi ricorda quello delle mini pizzerie popolari dei vicoli di Napoli, del film della Loren per intenderci ; la pizza che si serviva anche fredda , accatastate in vetrina e che si può piegare e mangiare camminando...Lo posso dire essendo un appassionato di pizza e avendo frequentato per due decenni Napoli e la costiera.
Nel piatto la pizza appare ben cotta ma nel bordo e nelle parti più spesse rimane un po' cruda, in genere succede agli impasti con alta idratazione e farine iperglutiniche.
Vini in menù campani,pochi ,ma di buona qualità e a un prezzo accettabile.
Conto nella norma a Sanremo.
