Pizzeria Savô In Genova

Went for dinner, nice and welcoming place, a kind maitre. The service is quite fast in an atmosphere of serenity, the choice of pizza is very wide for omnivores, for vegans only one choice, still gourmet, I was sorry not to try it with all the ingredients provided (because they were finished and/or forgotten, which can happen, but at least it reduces the cost of the pizza since I wasn't notified before ordering it and I had to ask for clarification on the matter). I recommend greater attention to an audience that is growing and deserves the same attention in the proposal.

In tema di pizze ormai è da parecchio che mi affido solo alla guida "pizzerie d'Italia" del gambero rosso ma qui per me hanno toppato: questa non è una pizzeria da 2 spicchi ma tranquillamente da 3! Il locale è molto semplice e tutto il focus è concentrato sulla protagonista: la pizza. È impossibile rimanere insoddisfatti a partire dalla scelta. Team pizza napoletana o pizza sottile sarete entrambi soddisfatti perché ce n'è per tutti i palati. Hanno persino la "scrocchiarella" una pizza dal forte effetto crunch. La base comune è una però: l'altissima qualità. Le materie prime usate sono eccezionali e la bravura non solo dei pizzaioli ma di tutto lo staff è evidente oltre che sinonimo di alta professionalità. Peccato che le foto in allegato non possano esprimere a pieno il livello raggiunto, un vero tripudio di sapori accompagnano un impasto leggero, mai pesante e con abbinamenti non comuni ma ricercato e studiati. Di questo passo il terzo spicchio sarà una pura formalità. Se dovessi tornare a Genova non ho minimamente dubbi su dove tornare. Non badate al prezzo. Savô è una vera e propria esperienza culinaria, perché la pizza è una cosa seria.
