27/11/2025: A fantastic traditional pizzeria with well-cooked and topped local products, unique to the area. I'm talking about farinata, a thin-crust pizza made with a batter of chickpea flour, water, olive oil, and salt, baked in a wood-fired oven. Originally from Genoa, it has become a typical Piedmontese dish, usually ordered as an appetizer while waiting for the pan pizzas.
The pan pizza, or pizza al tegamino, is unique in that it's cooked in a small iron or aluminum pan, rather than sitting naked on the bottom of a wood-fired oven (see photos). Soft on top, well-seasoned, and crispy on the bottom, it's a great alternative to traditional pizza, and has become a tradition in Turin and Piedmont, though it's starting to gain popularity.
Il Cavaliere doesn't just offer excellent farinata and delicious pan pizzas, but also excellent desserts to round off a traditional and enjoyable dinner.
Special mention goes to the staff, who were kind and friendly from the start. Excellent experience.
