I was lucky enough to see Adriana at work, and certain images are unforgettable: she would place the pan in the wood-fired oven, then, halfway through cooking, she would take it out with a confident gesture and place it on the counter. Then, with her plate piled high with mozzarella, she would top it with her unmistakable gesture. A gesture that has remained in the hearts of those lucky enough to watch her work.
Today, the baton has been passed to Rosella and Raffaella, who continue to carry on this beautiful tradition with love and simplicity. The shop is still there, on the Tolfa avenue, tiny, but rich in history and flavor.
The pizza? Just one, as always: mozzarella. It's not thin, it's not thick: it's unique. Every 10-15 minutes, a steaming pan comes out. Watch your taste buds! It's piping hot... and impossible to wait.
