They don't have pasta dishes or pizza.
The atmosphere is good and the service is very good.
I don't know if I would repeat.
21/01/2025: Historic trattoria in a neighborhood that still escapes the tourist horde, mostly inhabited by students. Il Cibreo is an institution, restaurant, theatre, bar and indeed trattoria. Booked well in advance, we arrive at 12.20 and are politely shown the door because the restaurant opens 10 minutes later. Patience, tour of the neighborhood, we still return ahead of the reservation and end up in a small table opposite the door, catching drafts for the whole lunch, really a shame. Excellent Tuscan food, but uneven portions. Finocchiona (a poor cured meat) 8 euros for two slices, generous and excellent lasagne, the ribollita (very good) doesn't even fill the plate, it's obviously not a cost problem, more care in the setup would be enough. It's a shame for the wide range of dishes of the day, praised verbally by the kind waitress, without any mention of the prices of the dishes, an objective drop in style, we could have asked, but why do you negotiate in the middle of the room? A blackboard would have solved any embarrassment. Modest house wine, oxidized Sangiovese, high volatile, basic wine list, but with some interesting things. High prices, as now everywhere in Florence. In short, long live Cibreo, but will it be able to survive the obvious tourist drift? If we have to consider the quality, authenticity and price ratio, the Tripperia Pollini, parked outside the shop windows, is probably the most appropriate choice.
