Pinsotto In Genova

I hosted a family dinner at Pinsotto, and it was a perfect evening in every way! My family is all quite critical, but they were pleasantly surprised by the deliciousness of the pinsa, cooked very well, and the high-quality ingredients used to topping it. The waiters are kind, and the staff is generally very attentive to food intolerances and celiac disease. In fact, there was a celiac at the table, who usually feels sick elsewhere due to airborne contamination of the flour, but here the pinsa for celiacs are prepared and cooked separately, so much so that she didn't have any symptoms at all! The best in Nervi, I can't say enough after visiting three pizzerias. It's not about eating a pinsa, but about savoring and distinguishing the quality of the various ingredients...from the dough to the oil, the tomato...the fantastic buffalo mozzarella and 'nduja...this is enjoying food. Thank you.
