A bustling place with plenty of white light, but that's typical of Italy. Delicious and a wide variety of foccaccia, pinsas, both rossa and bianca. Several with distinctive toppings. It's a bit trickier for vegetarians because they want to show off typical Umbrian toppings, which are often salsiccia, salume, or prosciutto, but they managed it anyway. They also have delicious fried appetizers. Groups can come by reservation. Also open on Sundays.

We had dinner last night, everything was delicious, but I want to focus on two things in particular.
The supplì were amazing, everything was very balanced, from the excellent ragù to the stringy mozzarella, and finally the hint of lemon zest that cleans your mouth. Everything was very balanced and harmonious, just like grandma's!
Excellent pinsa, the hydration and leavening that give it crispness and lightness, excellent ingredients.
Compliments to the staff, a well-deserved review.

The restaurant is in the center, within walking distance because it is inside the pedestrian area. The pinsa, which gives the restaurant its name, is certainly very good regarding the quality of the dough. The judgment on the various types depends a bit on the tastes. The appetizer, fried and other, rather normal. The staff is friendly, there is a lot of outdoor space as the restaurant uses Piazza San Giovanni decollato.

bel posto moderno, ben arredato, servizio celere e personale molto cordiale. all'arrivo non c'era posto ma hanno preso il mio nome dicendomi di ripassare dopo 1/2 ora, dopo 15 minuti mi avvisano per telefono che il tavolo è pronto. Cibo molto buono di ottima qualità. Specialità pinsa ma anche il resto del menù non è male.

Capitati lì per caso, il locale è informale e in buona posizione in centro. La pinsa è davvero molto buona, saporita, ben lievitata e condita con buoni ingredienti.
