All the meat is purchased from local suppliers, with the relevant labels displayed in the butcher shop. They never try the "wow" factor with their dishes (which are always the same) because they only do what guarantees the customer the best experience and quality. You should try everything they offer, especially the bombette, the sausage, and the artisanal capocollo (for my tastes)...
