Più che una cena un'esperienza: insieme ad amici abbiamo scelto il menù al buio con degustazione vini in abbinamento. I piatti sono stati tutti un'esplosione di sapori particolari e gusto a partire dall'entrée fino al dessert. Materie prime di qualità sapientemente lavorate e presentate: sono rimasta colpita dalla portata a base di ceci, un alimento semplice trasformato in modo sublime.
Servizio attento ed accurato ma non invadente in un ambiente elegante e dallo stile minimalista anche se a mio avviso, l'atmosfera generale risulta un po' fredda.
Complimenti allo chef (la stella Michelin è meritatissima) e a tutto lo staff di giovani molto preparati e professionali.

Meta fortemente voluta e pranzo spettacolare, tutto perfetto con un servizio di altissimo livello!
La filosofia di questo ristorante è ben chiara sin dall’inizio, lo chef dimostra di saper innalzare al top materie prime eccellenti.
Un percorso davvero magistrale con un pairing azzeccatissimo e una combo pane (tra i più buoni mangiati in assoluto) e lardo di colonnata da far impazzire.
Nota per le paste ripiene e per come in questo ristorante si trasformano i ceci in un capolavoro gastronomico.
Quando poi pensi che tutto volga al termine arriva il pastry chef che piazza un capolavoro folle che non voglio spoilerare, un dessert fuori di testa.
Bravissimi, è un arrivederci!

Excellent starred restaurant. Nothing is left to chance, from service to cutlery, from dishes to wine pairings. Finally, a mention for the beautiful and well-kept location.
A restaurant within everyone's reach both for the ingredients used, certainly of excellent quality and well treated but all very common, and because the combinations were not extreme. Finally, the price, which is not at all high, is worth what you get

For our first starred experience, my wife and I wanted to rely on Paca.
In addition to the à la carte menu, the restaurant offers two different tastings: a "short" one, in their humble opinion, and a longer one.
We chose the first option, which includes, in addition to the welcome aperitif consisting of 4 appetizers, 7 courses (selection of bread products, 2 appetizers, 3 first courses and a second course), the refreshing pre-dessert, the dessert and the mini pastries.
We combined this menu with a selection of accompanying wines, consisting of 2 whites, a red and a 2004 fortified white wine to conclude the experience.
As usual for a service of this level, you are pampered for the entire duration of the experience thanks to the preparation and coordination of the dining room staff.
The dishes offered are born from the skilful use of genuine and simple ingredients, revisited by the contemporary vision of the chef who exponentially increases their taste while maintaining their simplicity. An example is the first appetizer, where with a single ingredient, in this case the chickpea, an ice cream (chickpea) was created with a foam (chickpea cooking water) and a crunchy part (chickpea peel).
You wake up extremely satisfied.
In my opinion, the price is irrelevant: you know that an experience like this will cost you more but the satisfaction of the senses is such that you don't consider the amount spent. In any case, for what we ate and drank and for the service offered, the bill was honest.
I thank the Paca staff for enriching even a special occasion like my wife's birthday.
