Fantastic experience. What more can I say?
Everything was perfect. The atmosphere, the service, the presentation of the dishes, and their flavor.
Kudos to the entire staff, made up of very welcoming and professional young people who thoroughly explained the dishes and the matching wines.
It truly deserves its Michelin star.
We'll be back to try the cheeses, which look delicious.

I went to Paca in Prato, a Michelin-starred restaurant. The service was impeccable, the staff attentive and precise, nothing to complain about.
The food, however, didn't entirely convince me. I'm not talking about price or quantity, but rather the taste: the dark sauces were a bit too overpowering, covering up rather than enhancing the dishes. Everything was well executed, the dishes were carefully prepared and presented with precision, but ultimately the experience was ordinary, without any particular emotion or anything that would make me say, "I'll be back."

A truly excellent dinner! We took the "long" course with 9 tastings, and there was no shortage of pleasant surprises.
We were particularly impressed by a chickpea appetizer featuring three different consistencies and three different temperatures—spectacular! A first course of gnocchi and snails offered an incredible explosion of flavors. But the highlight, in our opinion, was the rainbow trout. Every part of the fish was treated with excellence, creating several mini-dishes with unique flavors and consistencies, with no waste and respect for the value of the raw ingredients! Another great surprise was the dessert of salad, mushrooms, and raspberry parfait! The entire dinner was a skillful and intriguing interplay of sweet and savory flavors, blended in an original and thoughtful way. The service deserves special mention. Courtesy, expertise, and joy combined in a perfect and impeccable service. We'll be back.

I've been to Paca immediately after it received its Michelin star, and again now. My first experience was incredible…one I'll never forget: the attention to detail, the passion in describing dishes, and the advice on how to fully enjoy them, along with dishes that were completely surprising to look at and taste. This most recent experience was decidedly below par: superficiality and lack of customer service, a lack of passion, and some dishes that were a bit banal. It's a shame. I hope to return a third time, and that it will be even better than the first.

Locale sobrio, elegante e intimo, menu degustazione lungo… un’attenzione alla storia delle materie prime del territorio interessantissima, piatti che ti conquistano appena li vedi, ma quando li assaggi… sublimi, i contrasti delle consistenze, l’armonia dei sapori tra loro… davvero un’emozione infinita… personale attento, preparato ma mai invadente, e poi lo chef… quando si dice che ci metti anima e cuore e si vede e si sente nelle sue creazioni❤️ meravigliose… non lo consiglio, lo straconsiglio!!!!! Un po di foto per rendere l’idea, BRAVI BRAVI BRAVI meravigliosa serata

Eating the food at Paca was a phenomenal experience. The “long journey” tasting menu was highly creative but not cliché, and the flavors reminded me of experiences I have not considered in many years. I finished the dinner recentered - thank you!!

Cena regalo di compleanno.
la passione è la cura con cui ogni portata viene descritta si ritrova nei piatti. Accostamenti che possono sembrare azzardati, ma alla fine perfettamente riusciti nel piatto. Abbiamo fatto la degustazione “lunga” un percorso equilibratissimo tra piatti e bevande, ho apprezzato molto il legame con il territorio. Davvero bella esperienza!

Wow! I loved this michelin-restaurant - especially the way they use local ingredients and ingredients that don't immediately appear "fancy", for example chickpeas. The ingredients are put into a context that is really interesting. Nice staff - but I didn’t find the vibe cosy/warm.
