Osteria in the center of Todi with seats inside, on a covered veranda and also outside (but quite isolated from the road).
They serve typical food, with a little more particular appetizers. We had a salad with artichokes, chicory and salted ricotta and a potato, pecorino and truffle flan as starters, both very good. As a first course, gnocchi with broad beans and pecorino, not worthy of note. The wine however was very good.
The staff was very helpful, perhaps a little inexperienced but made up for it with friendliness.

Amazing, these are the first words you can say. Very tasty. It's worth coming to taste the pork cut with artichokes, an amazing dish, big tasty dishes and the wine recommendation was excellent. Very worth coming.

I came across this place by chance, during a visit to the historic center of Todi.
I'll keep it short, the food is good.
Finally a place where the famous "seasonality" that many restaurateurs preach but which is difficult to find around is respected, at least as far as my experience is concerned. I consider myself capable of appreciating good food and also commitment, and frankly here I found both reasons to praise the guys who run the restaurant.
I found cardoons included in the menu, the famous seasonal side dishes which are often reduced to baked vegetables and little else.
The apparently simple cuisine of the restaurant actually hides a complexity of flavors that really satisfied me. We decided to opt for two second courses, the chicken Cacciatore and the pork fillet with artichokes. I would also like to point out the artichokes present on the menu which are not easy to find.
The complexity of the flavors lies in the well-done cooking and in the amalgamation of the ingredients that marry together, creating the famous harmony that should be in a good dish.
When we say "grandmother's kitchen" or what in the common ideal is the elderly lady who wakes up early in the morning and goes first to the vegetable garden then to the chicken coop and immediately starts cooking what she has found. Well done slow cooking.
Frankly, I grew up with that "grandma who gets up early in the morning" and I know that kitchen well, so I know how to recognize it when I find it.
As far as I'm concerned, from today Todi will not only be a beautiful medieval village, but will also be the place where the Osteria Valle is located.

Ho conosciuto questo locale per caso, durante una visita al centro storico di Todi.
Ve la faccio corta, si mangia bene. Finalmente un locale dove viene rispettata, almeno per quanto riguarda la mia esperienza, la famosa “stagionalità“ che tanti ristoratori vanno predicando ma che difficilmente si riesce a trovare in giro. Mi ritengo capace di apprezzare la buona cucina ed anche l’impegno, e francamente qui ho trovato entrambi i motivi per cui elogiare i ragazzi che gestiscono il ristorante.
Ho trovato i cardi inseriti nel menu, i famosi contorni di stagione che spesso e volentieri si riducono a verdure al forno e poco altro. La cucina apparentemente semplice del locale, nasconde in verità una complessità di sapori che mi hanno veramente soddisfatto. Abbiamo deciso di optare per due secondi, il pollo alla cacciatora e il filetto di maiale ai carciofi, faccio notare anche i carciofi presenti in menu non facili da trovare.
La complessità dei sapori, sta nelle cotture ben fatte e nelle amalgamazione degli ingredienti che si sposano fra di loro, creando la famosa armonia che dovrebbe esserci in un buon piatto.
Quando si dice “la cucina della nonna“, ovvero quella che nell’ideale comune è la signora anziana che si sveglia presto la mattina e va prima nell’orto poi nel pollaio e subito si mette a cucinare quello che ha trovato. Cotture lente ben fatte. Francamente, io con quella “nonnina che si alza la mattina presto“ ci sono cresciuto e quella cucina la conosco bene, pertanto la so riconoscere quando la trovo.
Per quanto mi riguarda, da oggi Todi non sarà solamente un bel borgo medievale, ma sarà anche il posto in cui c’è l’Osteria Valle.
