14/01/2025: When a Genoese meets smiles and courtesy, he is already taken aback and happy like this... This is why I want to say a few more words to define the Aquarius experience: in the face of great courtesy and excellent intentions, I am convinced that it can easily reach excellence!! You cannot judge a place by its environment, especially if it is very clean and tidy; but you can't ignore an atmosphere that smells of the past, of lines and colors from other years. It is not necessary to follow fashions & modernity at all costs: a few small targeted tweaks, without large investments, could make a lot of money! Let's get to the dishes: finding something alive is not at all a given even in seaside cities like mine, so chapeau. My diner says the raw prawns were fabulous! the oysters, some very salty... water balance? My seafood salad, I asked first if it was warm, and so it was, well balanced with the vegetables; but why then the 4 mussels and the large piece of tuna, cold from the fridge?? a great shame, because they spoiled the final effect. The mixed grill was richer in quality than often happens - and the price was in fact the consequence - but here too, the cooking was a moment ahead, with the result that some pieces were a little dry and too firm... Among the desserts, Pastiera TOP without hesitation!! more authentic than many 'housewives' I've eaten.
