We've been to Osteria del Baccalà twice.
The atmosphere is rustic, almost spartan. But as soon as you sit down, amidst the wood, the well-worn objects, and that slightly timeless atmosphere, you realize that here all the attention is on the dish.
And indeed, the star of the show is the cod.
They prepare it in many ways, from stockfish to more creative preparations, always with care.
The "Rocher di Teano" struck me: a crispy crust on the outside, a creamy center inside, with the polenta cream binding everything together and the cod flakes adding flavor. A very elaborate play on textures.
The cod and bean soup was also very pleasant: warm, thick, with the croutons absorbing the sauce and becoming almost creamy.
But my favorite remains the "Carrettiera" mussel: a tall, juicy piece, with that garlic that smells without overpowering it, and the crusco pepper that adds a slightly smoky, crunchy note. A simple dish, but made with precision.
The service is fast, direct, and unpretentious.
It's the perfect place when you're traveling between Rome and Naples: you can get there easily and eat something that will rejuvenate you.

For lovers of the genre, this is a true gem worth trying. I'm a cod lover and have visited several specialty restaurants over the years, but in my opinion, this one is a cut above the rest. The atmosphere is very rustic and welcoming, with very friendly staff. The "fil di ferro" (a kind of fried fish) is excellent, and the fried meatballs in tomato sauce are exceptional. The fried cod is delicious, not at all salty and perfectly breaded. There aren't many tables, so reservations or arrivals well in advance of meal times are recommended.

We stop here often, returning from weekends in the mountains of Abruzzo. A welcoming place with peasant-style copper and pewter objects, chili peppers and onions on the walls, and flowering plants covering the entrance. Prof. Antonio, the owner, is welcoming and a jazz connoisseur. The staff is polite and smiling. Forget your diet! Take advantage of this opportunity to eat the best cod you enjoyed after your trip to the Lofoten Islands. Raw cod with lemon or citrus, fried cod meatballs sautéed in tomato sauce for an appetizer; the famous fil di ferro (spaghetti with garlic and oil, cod, and Caiazzo olives) or paccheri alla genovese for a first course; fried cod and cod with onions, olives, and capers for a second course; an excellent and carefully curated wine list... I won't even bother listing the menu here. Check out the website. Everything is excellent quality and wonderfully cooked. Highly recommended. N.B. Don't forget to book, it's always very full.

Every time I pass through Vairano, I stop to taste and enjoy the "professor's" delicacies. He never disappoints, always a pleasant sensation of eating without feeling heavy. A reality that is confirmed.

THE SERVICE NEEDS IMPROVEMENT, THERE IS A NEED FOR A MANAGER TO MANAGE THE WAITERS WHO ARE OFTEN RUNNING AROUND. BUT IT'S JUST A QUESTION OF ORGANIZATION. A unique atmosphere where everything revolves around cod. Cooked in a variety of ways, the flavors are unique and the quality is top-notch. The staff is very young but knowledgeable and attentive to the needs of their guests. I highly recommend it and will return. Good selection of local wines.
