I dined with my family and chose the five-course menu, allowing the chef to guide us in our selection. We dined indoors, with a splendid view of the kitchen and Chef Maicol. The traditional flavors, creatively reinterpreted, and the quality of the ingredients were extraordinary: a true delight for the palate. The setting, with its exposed brick walls, is evocative and consistent with the chef's philosophy: tradition and modernity, with great attention to detail. One detail I appreciated, observing from the open kitchen: the chef tastes every dish, checks the pasta before draining it, and measures the temperature of the meat before serving. These are gestures that, after thousands of times, he could now perform automatically, relying on his experience. Yet, it's clearly evident that every detail is meticulously checked: for me, this is the truest sign of a constant pursuit of perfection and a profound respect for the customer. The service was excellent: fast, efficient, and friendly. I felt welcomed and cared for. The wine list is also very well-curated, with a selection that highlights regional labels in particular. I hope to return soon. I wish Maicol and his young colleagues a bright future: a splendid company that deserves to grow. Well done!

What a wonderful experience! We enjoyed a top-notch dinner, from traditional appetizers to the grilled meats—simply sublime. The restaurant, splendid and renovated with respect for tradition, maintains a vibrant connection between past and present. Making everything even more special is the team's youthful spirit, combined with a truly rare level of professionalism and care. Everything was absolutely perfect. My husband and I went to celebrate my birthday, and we couldn't have chosen a better place. Everyone was so kind, the food was delicious, and the atmosphere was beautiful. Nothing to complain about. I can't wait to go back.

Excellent culinary offerings, extraordinary flavors and combinations, and well-prepared. The setting is also very pleasant. Service could be improved due to the longer wait times and the small number of dishes consumed.

Refined, daring and successful combinations. There is the raw material, there is the research, but above all there is the remarkable hand of the chefs. The prices are like those of an osteria as the name suggests, but the experience is that of a restaurant. It is worth it. And then you have to take a look at the grill and the open kitchen, they create a unique and ancestral atmosphere. I recommend a pasta with a space-like green tomato sauce, and a pigeon cooked to perfection. The tasting menu is worth the trip.

Everything is simply fabulous, and there is no need to add anything else. At dinner in this osteria after having found it listed in the Michelin guide, we found ourselves in a beautiful place, outdoors on a summer evening, in a quiet and extremely pleasant setting. Few seats, I presume by choice of the place, for an impeccable service, attentive but not intrusive, which guides the choice of dishes and wines. Few dishes à la carte, seasonal menu, with really interesting options. Good choice of wines both from the area and from other areas. Non sono ammesse votazioni diverse. Questo locale sito in località Torano Nuovo, provincia di Teramo, è una di quelle chicche, un posticino di nicchia che ha la capacità di rimetterti al mondo. Ogni qualvolta ho la possibilità di fuggire dal caos della Capitale, corro qui per una cena che sa stupire e coccolare. Da quando ha aperto è diventato il posto del cuore. Negli ultimi anni, per una serie di motivi, ho avuto la fortuna di girare molto l’Italia e il mondo e mangiare in posti di alto livello. Posso affermare, senza troppi dubbi, che Osteria dei Maltagliati difficilmente ha eguali. Anche la vasta scelta che offre Roma difficilmente riesce ad eguagliare questo piccolo e grazioso ristorante collocato in una piccola provincia del teramano. È tutto perfetto. Il servizio si contraddistingue per la gentilezza e la cordialità dei camerieri: precisi, puntuali, preparatissimi su contenuti dei piatti e procedure. La mise en place: perfetta, contraddistinta dalle ceramiche del noto borgo di Castelli. Un piacere per gli occhi! Il cibo: attenzione alla stagionalità dei prodotti, si parte dalla tradizione e si rivisitano alcuni piatti. Non sbagliano mai un colpo!!! Quello che salta subito al palato è l’attenzione nella scelta delle materie prime, aspetto che fa la differenza! I tempi: scanditi alla perfezione. Le portate arrivano, una dopo l’altra, nè troppo presto, nè con attese infinite. La cantina: variegata, ampia. Dalle cantine locali a quelle francesi. Tutte le gamme di prezzo ma prodotti sempre eccezionali. “Il Postino”, il mio preferito, prezzo modico (30€). Consigliatissimo. Un bianco che ogni volta che vado compro anche per portarlo a casa! Le coccole: la cena si apre con l’attenzione dello chef, vengono serviti pane di loro produzione accompagnato da lardo aromatizzato al lime e un assaggio di olio. Il lardo vale da solo tutta l’esperienza. Le porzioni: giuste. Non si esce affamati e nè com senso di pesantezza per aver mangiato eccessivamente. La location: curata nei minimi dettagli, piccola, accogliente, le luci soffuse e gli arredi che rimandano a un passato ancora presente e radicato nelle nostre culture… Il prezzo: adeguato. La spesa media si aggira intorno ai 50€ a persona, considerando degli antipasti condivisi, una portata principale, il dolce e una bottiglia di vino. Assolutamente ben spesi!!!! Infine, nota di merito al bagno. Pulito e curato anch’esso, sapone/scrub e crema mani a disposizione dei clienti, lasciano le mani morbide e profumate. Le lavette di stoffa nell’anfora un tocco di classe! Per me assolutamente un DIECI!!! Bravissimi ragazzi, continuate così! A presto!!!

Posto incredibile! Dall'antipasto al dolce tutto eccellente. Materie prime scelte con estrema cura e lavorate con sapienza. Incredibile che lo Chef sia così giovane. Segnalo anche una carta dei vini veramente di livello.
