22/03/2025: We chose to end our trip to Rome with an authentic experience, far from the usual tourist circuits, to immerse ourselves in the true Roman culinary tradition, the one that is too often forgotten. For this reason, we relied on Checchino, a restaurant that not only offers the great classics such as gricia and cacio e pepe, but also preserves and passes on with passion dishes that tell the gastronomic history of the city.
Here, food is more than just a meal: it is culture, memory and courage. Not everyone is used to tasting pajata, the appetizer with head, beans with pork rinds, tripe or trotters, but those who truly love cooking should allow themselves the pleasure of overcoming every preconception and savoring the depth of these ancient flavors.
The atmosphere is warm and welcoming, with wood burning in the fireplace and discreet and impeccable service. We chose a half portion of gricia, one of macaroni with ragù alla vaccinara, a Roman-style artichoke prepared with mastery, artichokes with coratella and an incredible pajata. All accompanied by half a liter of Syrah, two coffees and a bottle of water, for a bill of less than 30 euros per person.
An experience that we recommend to those who truly want to understand the soul of Roman cuisine, without fear or hesitation. A sincere thank you to the owners, who with dedication and respect for tradition carry on a job that is perhaps not always easy to understand, but essential to keep the authentic gastronomic history of the city alive.
