We ordered both the meat and fish courses separately. I think I ate six plates for over two hours, and they were so abundant that I wondered when they would end.
The amuse-bouche was incredibly salty, but the other dishes were delicious. I also tried pigeon for the first time, and the sauce smelled a bit off-putting, but it was okay.
The tiramisu was truly delicious.
They asked for a tip when paying, which was a bit much, and since we live in a country where tipping isn't a culture, I felt a little bad about it.

Upon entering the restaurant, the entrance has an amazing walkway of fairy lights that make for an amazing photo. Once through, the dining room abruptly starts and you are left standing there confused until one of the waiters acknowledges you to seat you. On the night we went, there were only two other tables and we were placed next to the entrance such that we couldn't see into the kitchen. That night, they were training a waiter so we had a weird experience of one waiter with amazing service and attentiveness and another where you would not expect for fine dining (Not pouring water for you, not explaining the dishes, not cleaning up the plates and table after each dish etc.).
Apart from that, food was amazing and we thoroughly enjoyed each meal. We opted to select one meat and one seafood course so that we could try one of each dish. Each course brilliantly highlights the local Tuscan cuisine so you won't miss out whatever you choose.
Given the restaurant is of such a high calibre, we were expecting both the service and food to be perfect. This was probably a once-off issue but unfortunately was our experience coming all the way from Australia looking forward to fine dining in Italy!

Ora d’Aria was exceptional. The service was flawless and every dish delivered pure pleasure. The lobster pasta was the best I’ve ever had, and the Normandy butter with anchovy was unforgettable. The beef with its cauliflower crust was incredible, and the cod was simple on the surface but the orange reduction gave it real depth. They even brought out complimentary biscuits that melted in my mouth. Watching the chef work in the open kitchen added something special. You can feel his calm, steady presence in every detail. This place deserves six stars.

Away from the hustle and bustle of the city, yet close to the Ponte Vecchio, we enjoyed a peaceful and relaxing time at L'Oro d'Aria. The staff was attentive and multilingual. We had a choice between a typical meat or fish menu, which was very refined and generous. The wine list was extensive, with a wide price range. We had a view of the kitchen and the meticulous organization of the chef and his team. Bravo!

We stopped here for lunch and this fine dining gem exceeded all expectations. The tasting menu was a culinary journey—from the delicate sea bass carpaccio to the perfectly seared veal. Each dish was presented beautifully, almost too pretty to eat! The sommelier suggested wines that complemented every course. The atmosphere is intimate, and you really feel like the chefs put heart into every plate.

Ultimately, a disappointing experience.
There were two of us, my wife and I, and we were seated next to the glass door leading to the kitchen, through which all the food passes into the dining room. I'll start by saying that I really like the open kitchen and it's a sign of great safety for the establishment, but a very effective ventilation system is needed, otherwise the odors leak into the dining room and confuse the diner's sense of smell (and also permeate my clothes; when I got back to the hotel, I had to hang them outside because of the strong smell).
We ordered two fish tasting menus. The ingredients were certainly excellent, but neither dish was truly successful, as even the most complex ones failed to blend the flavors together: both the Prawns with lard, cream of potatoes with truffles, and the Black Cod, chestnut polenta, rosemary, and raisins showcased the individual flavors of the ingredients used, but not a unified taste.
What a shame.
P.S.
We left the wine we bought by mistake and changed it, which is no coincidence. :)

I enjoyed all five courses without overindulging!
I had the fish course and was very satisfied.
The olive oil also had an excellent aroma and flavor.
