Officina - Cucina & Laboratorio In Verona

I booked this restaurant because it had been a while since I'd eaten good traditional Roman dishes, and I have to say they do them very well. I ordered the Jewish-style artichoke, which I'd never tried before. The artichoke is fried, and the leaves are crispy; the texture and flavor are similar to real potato chips, while the center of the artichoke is soft and a bit greasy. For my first course, I ordered tonnarelli alla gricia, creamy and delicious, and for my second course, coda alla vaccinara, which is very similar to a meat stew. Both are very filling dishes; if you don't eat much, I recommend ordering just one or the other; only order both if you're really hungry. The place is beautiful, with a slightly industrial feel, featuring wooden accents and iron tables and stools. The waiter was excellent, fast, and very friendly.

I had lunch at Officina and the experience was simply impeccable. If you're looking for a place where pasta is the star, you've come to the right place. We ordered several pasta dishes and were impressed by the quality of the ingredients and the perfect cooking: you can taste the in-depth research behind every dish. An honorable mention definitely goes to their Vegan Carbonara: I was curious to try it, and it exceeded all expectations. Creamy, flavorful, and incredibly balanced, it rivals the traditional recipe. It's proof that with talent and creativity, extraordinary results can be achieved. The atmosphere is welcoming and the staff are knowledgeable. I'll definitely be back to explore the rest of the menu!

I've been coming here for years, and I have to say the place has found a great pace and maintains a high standard of consistency and quality. The tiramisu is exceptional.
