The location is spectacular, but the real surprise is the experience they offer. Nothing is left to chance, from the service provided by highly trained staff to the aromas and quality of the food.

Catering as it should be done. Innovative and flavorful preparations, but starting from a true knowledge of the raw materials, many of which are wild harvested in the Alta Murgia.
This aspect, combined with the pleasure of explaining everything in minute detail, becomes a true taste experience, not the usual bland, low-quality approximation found in 90% of Puglia's restaurants, which excel (in theory) in their raw materials but not in their ability to use them to their full potential, much less in their ability to educate and engage the customer.
This is what almost all (and I repeat, almost, so as not to unfairly offend everyone) Apulian restaurateurs should learn.
What the customer should understand, however, is this:
If I have to go out for fashion, to eat poorly, and spend a fortune, I cook much better at home and invite friends over.
Quality dining is one thing; spending an evening in good company is another.
It's not a question of personal taste, but of good taste.
Regarding "unusual" wines, so-called "natural" wines—an unfortunate and incorrect term because it means almost nothing—need to be understood little by little because they represent a different approach to wine and drinking than traditional winemaking and winemaking.
One thing is certain: once you learn to appreciate them, it becomes difficult to go back.
But this absolutely doesn't mean that classic wines aren't good, nor that among natural wines there aren't also some terribly unpleasant extreme interpretations of wine.
Here, however, you can taste the expert work that has been done, and every pairing with the dishes will truly be the best possible combination for enjoying them, as if each glass drunk were a natural continuation of the food.
While at the table, you look into each other's eyes to find in each other the wonder and magic you are experiencing.
A place and an absolutely unforgettable tasting experience.

Excellent hospitality, a menu that is also an experiment with entirely plant-based dishes.
I would recommend complementing the dishes with a few additional ingredients to balance and enrich the flavors, textures, and presentation. I'm especially referring to the beetroot carpaccio and potato millefeuille.
The chef was extremely kind and made sure to accommodate our every request.
The location is beautiful.

I expected to encounter bolder, more flavorful flavors. I think vegetarian cuisine could be more daring. For example, the appetizer: I found the beetroot carpaccio with kefir yogurt boring and lackluster. The most interesting dish was the dessert. Excellent wine selection. Impeccable service. The location is stunning, but I would have preferred less "spiritual" background music to lighten the overly serious atmosphere.
