The staff is kind, meticulous, and professional. An unmissable experience for a restaurant that deserves more stars. The dishes are difficult to describe, but all exquisite. Each course... a ritual, also thanks to the beautiful story Anna tells. Everything is excellent!!!

First and foremost, of course, is the cuisine: research, creativity, and local ingredients blend to bring something new and original to the table, while still respecting traditional flavors. The dining room is also impeccable: Anna and Dodo are not only exemplary professionals, but true enthusiasts of fine dining in its entirety, as well as the chef's unique interpretation of it in this gem of a restaurant. The end result is a new and unique experience, yet one that never lets you forget the region you're in, both in terms of the quality of the food and the warmth and passion conveyed to the diners. A restaurant with only 5 tables, an experience you'll remember for the rest of your life. Everything was impeccable. One of the best experiences I've ever had in a restaurant, if not the best. First compliments to the sommelier Anna, who treated us extremely well, always with a smile on her face and a great knowledge of everything that happens in the restaurant. She chose excellent local wines to accompany the meal and recommended a local vermouth, which was the best I've ever tasted. Truly an excellent professional and a very kind person. Dodo was also in the dining room, and he was also very attentive, creating fermented drinks to accompany the tasting with non-alcoholic options. These two got everything right: their friendliness, the information they provided, their pairing choices, and their attention to the tables. Chef Domenico Marotta demonstrated a complete understanding of what he does. He is a master of flavors with infallible technical execution at every stage. All the dishes are full of flavor, textures, and presentations that make you feel bad eating them, but it's impossible to resist, so the dishes come back clean. Local products are valued and exalted with the techniques used. This restaurant is complete and deserves to be known by everyone. A superb demonstration of high-quality cuisine, without the use of showy dishes, but rather achieved through study, research, and care for the local area. The good food is complemented by the pleasantness of the entire staff: Anna, Dodo, and chef Domenico are friendly and welcoming. On tiptoe and without ever being intrusive, they were present and shared the meal with us without ever feeling affected. You leave wanting to return to discover new flavors in a friendly atmosphere. The alcoholic and non-alcoholic pairings are highly recommended, as they truly complement the dishes. Since you can't try both, I recommend choosing the non-alcoholic version to truly discover fermented beverages and kombucha.
