Perhaps the dosage of mozzarella (sometimes too much) on the Margherita needs to be improved, a custom that is very widespread in the north-east compared to other areas of Italy.

I finished the pizza course today, Marco is an excellent teacher, serious and precise but also nice! Great experience... now we just need to put into practice what we have learned!!
