We attended an oyster-themed evening at the Lupo di Mare restaurant in Bussero. The idea was interesting and the proposal was spot on: the oysters were very fresh, well presented, with appreciable variety and attention to the raw material. A gastronomic experience that focuses on the quality of the raw material. However, the wine list was not up to par. In an event dedicated to such a particular product, one would expect a targeted selection, with bubbles and whites capable of enhancing the flavor of the oysters. Instead, the choice was limited and not very well-curated, penalizing the pairing. The service was sufficient, without any particular flashes: courteous but distracted staff, times not always fluid. In short: the raw material was excellent, but the side dishes – wine and service – did not keep up. With more attention to detail, Lupo di Mare could offer a truly complete experience.
