It's undoubtedly one of the best I've had in a restaurant recently. The highlight? It's truly made the old-fashioned way. Finally, a ribollita that respects tradition, with the pieces of bread underneath maintaining their texture and character. Nothing like those "blended" versions you find everywhere these days, which taste more like a bland vegetable mush. Here, you can taste the quality of the ingredients and the skill of those who still know how to cook according to traditional recipes. If you're looking for authentic flavor and the perfect consistency, this is the perfect place. Highly recommended!
