There are evenings that remain imprinted in the heart, and the one spent at the Circoletto was one of those rare occasions in which everything - absolutely everything - borders on perfection.
From the first moment we were welcomed with warmth and professionalism by Gianfranco, the owner, who with his sincere smile and his passion for hospitality made us feel immediately at home.
But it is at the table that a real spectacle of the senses unfolds. Each dish was a journey, a story, a surprise. The raw material? Simply excellent. Raw fish of a touching freshness, fresh pasta that tastes of expert hands and tradition, second courses worthy of a standing ovation.
Impossible to forget the amberjack: cooked to perfection, clean flavor, balanced intensity. A dish that alone would be worth the trip.
And then he arrives, chef Calogero, a professional of rare humility and extraordinary competence. He told us about his creations with authentic passion, explaining the soul of each dish, the origin of the ingredients, the reason for each choice. It's not just cuisine: it's art, culture, emotion.
The service? Impeccable. The environment? Well-kept, welcoming, authentic.
Special praise also goes to the cellar: a truly surprising selection of labels, with rare and unobtainable vintages that tell territories, stories and expert hands. Each wine served accompanied the dishes, enhancing their flavors and giving us further emotions, as only bottles chosen with love and expertise can do. A wine list that alone is worth the visit.
There wasn't a single dish that didn't give us pleasure, amazement and gratitude. From the first to the last bite we perceived love, care and very high quality.
Our vote? Five full, sincere, deserved stars.
And a promise: we will return to Sicily soon, even just to be able to sit at that table again and let ourselves be enchanted.
