We made a reservation at Spilusi Restaurant in advance via Google because I'd read reviews that it was difficult to get a table. The restaurant is well located, neat, and very clean.
The food was generally good – the pizzas were truly delicious, with very large portions, so filling that we couldn't finish them all on the spot. What's more, even reheated the next day, they still tasted very good. However, we felt the cacio e pepe was a bit overly salty.
The service was attentive and engaged, at times even a bit too intense – frequent visits to the table and questions about everything made it difficult to eat in peace and finish our drinks without rushing.
It's also worth noting that reservations are probably not necessary during the off-season – the place wasn't very busy around 8:00 PM.

Without warning, they simply delighted us by telling us we were vegan. 😍
The chef, who is also an expert in vegan cuisine, prepared excellent dishes for us.
Our compliments to the staff and owner for their kindness and helpfulness.
Excellent food.

I went here with my friends around lunchtime. There was no wait, and the service was quite quick even though we went without a reservation. The staff was quite friendly and helpful, which is a plus. As for the price, I found it a bit more expensive than other places. The cover charge is €3, and a 0.75 cl water is also €3.
In addition to the items pictured, we also ordered a portion of fries, which came to €18.50 each.

Very good Cacio e Pepe, served impressively. A big plus for the opening hours, which are designed for tourists. It was difficult to find a place to eat around 3-4 p.m.

I just visited Spilusi in Brindisi and was extremely satisfied. The atmosphere is casual yet refined, the staff is friendly and fast, always ready to offer advice without being intrusive.
The food is the real highlight: generous portions, tastefully revisited Apulian cuisine, excellent ingredients, and bold yet never heavy flavors. The highlight is undoubtedly the cacio e pepe with guanciale served in a pecorino cheese wheel: spectacular, creamy, and truly irresistible. The pizzas are also very good, with a light crust and quality toppings.
Really good value for money.
In short: highly recommended, one of those places worth returning to. ⭐⭐⭐⭐⭐
