I found the cuisine to be extremely well-prepared. From the selection of top-quality products to the chef's transformation into complete dishes with well-defined flavors. The establishment is now historic and well-maintained. The chef's attention to detail—from bread to desserts, from breadsticks to unusual main courses—provides a more than justified reason to visit.

Their cuisine speaks the authentic language of the Aurunca mountains, made of recognizable flavors, excellent raw materials, and gestures rooted in rural culture. Faithfulness to tradition and personal touches coexist on the dishes: historic local preparations are lightened, refined, or reinterpreted with restraint, always maintaining a clear connection to local gastronomic memory. It's a cuisine that doesn't seek special effects, but focuses on depth of flavor and coherent storytelling. Today, Stuzzichino is much more than a restaurant: it's a place where agriculture, gastronomic culture, and hospitality intertwine in a virtuous way, offering an experience that sincerely speaks of the region and its people. During our visit, we tasted three dishes that epitomize this philosophy: Le Ciammotte ammoccate. Tradition dictates that the snails be purged upside down in perforated baskets. Before cooking, the shell is cracked at the back and stuffed with spices. They are cooked in oil flavored with white wine, mint, and the green part of fresh garlic. Homage to Campodimele. Crumble of grass pea flour, goat's milk ricotta, and Campodimele honey gel. Homemade ravioli. Homemade ravioli with borage in the dough and filling, butter, sage, and pea cream. Here we rediscover the countryside with all its aromas.

A special mention goes to the quality and perfect cooking of the grilled meat I ate at this restaurant, truly exceptional!!! It's worth it for that alone, but the rest of the menu is also truly delicious and meticulously prepared in both flavor and presentation. I'll definitely be back!
