The place is very nice and the staff very attentive. I ordered a filet alla Rossini because I was craving meat. They asked me how I wanted it cooked and explained that it would come with potatoes and Madeira sauce. When I cut into my steak, it turned out to be a beet! I couldn't believe it. It wasn't even good enough for a vegan dish. A vegan dish is prepared, not just a boiled beet. Anyway, they replaced it and admitted their mistake. They brought me some very well-prepared meat, but a very small portion. And everything was very expensive. But the beet incident will go down in history as a funny anecdote.

I had the opportunity to try Le Bubbole restaurant and was truly thrilled.
The food is excellent, with dishes crafted with attention to detail and perfectly executed flavor combinations. You can sense the passion and research behind every course, showcasing local ingredients.
Special praise goes to Emilio, who was extremely professional, attentive, and kind: his impeccable service made the experience even more enjoyable.
I highly recommend this restaurant to anyone who loves good food and authentic hospitality.

Absolutely outstanding — a well-deserved 5 stars! Everything was simply perfect. The food was phenomenal, full of flavor and beautifully presented. The service was world-class: attentive, professional, and genuinely warm. The interior design and the view were breathtaking, creating an unforgettable atmosphere. I visited this wonderful restaurant for my husband's birthday with friends.
We opted for a tasting menu that truly amazed us with its meticulous attention to detail throughout the dishes, where we always found traditional flavors with a modern twist that never distorted the dish's origins.
A special mention goes to the slow-cooked egg, with its truly unique flavor and elegant presentation, and the stuffed tagliatella.
Impeccable service, the staff were extremely friendly but always professional.

An exceptional dinner.
All the dishes were delicious, from appetizers to desserts. The service was attentive and courteous; I haven't eaten so well in years. Definitely worth a try.

This evening we ate à la carte, choosing an appetizer, two first courses, and a dessert.
The service was impeccable; compliments to the staff for their helpfulness and attentiveness.
Compliments also go to the chef for his attention to ingredients and flavors.
Personally, I can say he's done a great job of preserving Italian ingredients and dishes while blending contemporary cuisine.
If you're passing through Matera, I absolutely recommend eating here and enjoying an aperitif on the terrace.
