We had an exceptional dining experience at Le Bubbole restaurant Matera. We were recommended there by the concierge at our hotel. From beginning to end the experience was fantastic, the environment is stylish, high end but relaxed.
Frederica brought us to our table & explained every dish & what was distinctive & characteristic of the region, she was attentive & engaging in conversation which we appreciated. Dino our sommelier help us select a perfect local wine to accompany our food choices, he was charming & funny.
While the ambiance & food was great, Federica & Dino elevated the experience to exceptional.
Best meal & service in our so far 3 weeks travelling the regions of Sicily, Puglia & Basilica.

We had a wonderful dinner at Le Bubbole at Palazzo Gattini in Matera. The amuse-bouches were playful and surprising.
I started with ‘Our eggplant parmigiana’ (€22), a deconstructed version served with fior di latte ice cream on the side — it was so refreshing I ordered another scoop for dessert. Lori had the ‘Marinated amberjack, puntarelle, mango and passion fruit’ (€26).
For pasta, Lori had the ‘Spaghettone with garlic and oil, duck and tarallo’ (€26), while I had the ‘Stuffed tagliatella — suckling pig, cardoncelli mushrooms and canestrato di moliterno cheese’ (€25).
My main was ‘Lamb, artichokes, potatoes and miso hollandaise’ (€36), which unfortunately wasn’t cooked to my liking due to a miscommunication with the waitress. Lori’s ‘Turbot in crust, truffle and baby chard’ (€38) was spectacular.
The wine pairings were excellent, the service was charming, and the young chef Gabriele Marino was warm, sweet, and incredibly passionate. He even came out as we were leaving to personally discuss the meal with us.
Overall, the creativity and execution were outstanding. Highly recommended — we’d definitely return.

During my stay in historic Matera, I dined at Le Bubbole on Tripadvisor, and this was without a doubt the culinary highlight of my trip. The restaurant is beautifully hidden among the iconic historic stones and offers an atmosphere that immediately enchants.

The menu was created by Chef Gabriele Marino. Each dish combines the rich, local traditions of Basilicata with modern innovation.
Taste explosion: The ingredients are incredibly fresh and perfectly matched. It immediately stimulates your taste, sight, and smell. Wine pairing: The recommended wines complement the dishes seamlessly and elevate the entire meal. Atmosphere and Service Decor: The restaurant is beautifully decorated, and the historic setting of the Sassi creates a relaxed, romantic atmosphere. Service: The staff is extremely attentive, professional, and hospitable. You feel welcome from the very first moment. Conclusion: Are you in Matera and looking for an unforgettable gastronomic experience with excellent service? Then absolutely do not miss Le Bubbole! Reservations are recommended.

I truly had an exceptional experience here. Me and my mom had dinner here and we couldn't have been more happier to eat here. The atmosphere was amazing and the staff was even better. Attentive, friendly (even though I couldn't speak Italian), and passionate. Dino and Federeca were so kind and gracious! True thanks to the chef Gabriele. The beef tartare otherwordly, sauces complimented each dish so well. The main courses - the cuttlefish and lamb - were so extraordinary. The drinks as well that were recommended were spot on. Highly recommend this place, it is a must go to when coming to Matera.
