Arcangelo Dandini is like this: he comes to the table to welcome you and sits next to you to explain a few things when you ask him why his carbonara is rounded, perfectly balanced, with everything pushing just right, without anything overwhelming. Smooth pasta "because the ridges cause imperfections in the cooking." And Neapolitan "because it was the Neapolitans who gave nobility to pasta." Candles, then. Cut, not broken, and cooked to perfection. No egg whites that coagulate ("I was the first to use only yolks") and no pepper during cooking, but a mix of three peppers at the table ("I could use more, but I'm not a painter and I'm not a painter"). Eighty percent pecorino romano, "but not the brine kind," and twenty percent pecorino sardo, "smoked with real wood." After ten minutes of him jumping between the physics of cooking, the chemistry of reactions, the mathematics of doses and (his) cooking philosophy, he dismisses you with a "But this is literature, we're eating here...", gets up and leaves.

Excellent family-run restaurant near Castel Sant'Angelo, where you can enjoy mostly traditional Roman dishes, carefully prepared. The staff is friendly and courteous, and the atmosphere is pleasant and welcoming. Prices are reasonable. A regular stop on my Roman trips.

You enter and are immediately greeted by an atmosphere that feels like home, surrounded by the Chef's mementos and a warm, welcoming decor that immediately puts you at ease. The dishes are a journey through true Roman cuisine, a lifetime of memories and a love for food that comes through in every dish. Even a simple dish is brought to its best. The desserts are anything but ordinary, the result of meticulous research that manages to amaze with their sheer deliciousness, even when faced with the most daring creations... try the peach dessert, you won't regret it. For me, this place is a sure thing, a corner of culinary paradise amidst all the chaos of Rome.
