The restaurant, family-run and active since 1963, is located in a municipality in the province of Rieti surrounded by greenery. The well-kept structure has a convenient outdoor parking lot and a large garden for events. Finally, there is a wooden bridge over a river that flows right next to the restaurant, where you can eat in the summer and from which you can admire the beautiful colors that the seabed offers. As for the internal spaces, the restaurant has a large room where you can eat in the colder periods of the year. Obviously impeccable cleanliness. The service is also of a high standard. The furnishings are cared for in the smallest details. The dishes offered are expertly studied. The proposal can be divided into "land" and "water" dishes that can be chosen "à la carte" or tasted with special menus. Regarding those of the "water" proposal, it is surprising how it is possible to excite so much with freshwater fish. The choice of wines, both national and foreign, is able to satisfy even the most demanding. Truly exquisite desserts. The "game" at the end of the meal is original to encourage the customer to guess the flavors of some small proposals (I don't want to anticipate anything). Prices absolutely in line with the level of catering offered. I conclude by saying that it is difficult to describe with words the experience that can be had in this place. You have to try it.
P.S. last but not least, you will be informed that, given the special composition of the menu present at the table, it will be possible to take it home to bury it and watch flowers grow. Excellent ecological solution!

Everything is top notch, but what really makes the difference is the less formal environment compared to the normality of award-winning or highlighted restaurants in the Rossa.
The participation of various generations in the operation of the structure helps to raise its level even further, by virtue of the passion that can be seen in every gesture of each professional in charge...the chef Sandro, often in the dining room with the delighted diners, is that extra pampering that you didn't think you wanted and which instead makes the experience even happier, thanks to the words with which he explains the philosophy of his family and the meaning of every dish and every ingredient...in the end your desire is simply one: to come back soon to find them....
The return to the second star would not only be deserved, but more than due, given the scale of evaluations underlying the release....Think carefully, you who must, on what we would all really like to find in Rossa from here on out, given the crisis of vocations and the costs that are bearable only thanks to the wealthy sponsors and certainly not due to the sustainability of the business and/or its quality: today the future of haute cuisine is being decided, think about it....

I've been there twice for both dinner and lunch and the satisfaction has always been superlative. I've tried both the land and freshwater fish menus. It is the most popular international restaurant for this menu and tasting the dishes you understand why. I won't say anything else about the dishes because the story that the staff or owners tell about them is also a satisfaction. The location is truly suggestive due to the adjacent Santa Susanna springs and the perfectly maintained garden. I preferred to dine leaving the wine pairing up to them and I was impressed by the balance between the wines offered and the dishes served, however the excellent cellar satisfies even the most experts. A dish that I will always remember is the artichoke with egg!

Merita tutti i riconoscimenti(e forse anche più)ricevuti sino ad ora.
Ambiente elegante e servizio di livello,fatto da staff giovane dove nella sua attenzione mantiene sempre un tono giovanile e non pesante in un ristorante di alto livello.
Menù nulla da dire, quantità giusta dei piatti,per un menù lungo ma che grazie ad abbinamenti mirati non stanca il palato, tutt'altro,ogni piatto in accostamento è estasi,per chi ha curiosità nella cucina e prova interesse per abbinamenti diversi dal normale nei piatti è sicuramente il posto consigliato,tanto di cappello per la valorizzazione del pesce d'acqua dolce che spesso viene messo in discussione,nonostante avessimo segnalato intolleranze alimentari non hanno esitato,in alcuni piatti, a modificare ingredienti e abbinamenti specificatamente per il nostro tavolo.
Il prezzo ovviamente è alto se paragonato ad una normale cena di ristorante,ma vale in ogni singolo euro speso.
Chef sempre presenti al tavolo per una parola amichevole e curiosità su ogni piatto.
Sicuramente merita un'altra visita!(Ne meriterebbe una ogni mese,se fosse possibile!)

Definitely the restaurant that most deserves 5 stars in all categories. My absolute favorite thing about gourmet dishes is that they come from simple local ingredients. The affability and availability of the owner and the service staff are the added value. More than a lunch it was an experience. Unforgettable!

Un susseguirsi di sorprendenti esplosioni di emozioni.
Per ogni piatto, quasi tutte novità, si nota lo sforzo di ampliare le distanze, di partire, per ogni percezione, da distanze siderali, per poi, con maestria, creare delle vere e proprie sinfonie di gusti che si uniscono, fondono per stravolgere i nostri sensi.
Bravi.
Bravi in ogni singolo aspetto.
Un servizio attento, mai imponente, discreto ma presente, anche quando un commensale ha la cattiva abitudine di prendersi il tempo per il fumo, farsi trovare “per caso” nei pressi, appena torna in sala, per togliere l’ingombro del cappotto.
Una cantina viva, mai scontata, profonda e senza “zone morte”, intrigante e di spessore, frutto di conoscenza, di scelte azzardate e vincenti, senza far mai mancare splendide ancora di salvataggio, imbarazzate il rapporto qualità-prezzo, essendo in un locale stellato.
Vivendo ci può capitare che qualcosa non vada, qualcosa che ci tolga il sorriso, qualcosa che ci spinge a pensare che non saremo più disponibili a metterci nuovamente in gioco…
Regalarsi una esperienza così, ci insegna al contrario, che siamo ancora pieni d’amore, che nulla ci è stato tolto, che ancora siamo bravi ad emozionarci, che dobbiamo solo aspettare serenamente, perché basterà scegliere il luogo giusto, la persona giusta, per tornare ad amare, senza aver mai smesso, peraltro, di amare noi stessi.
