We had antipasti, primi, and secondi. Everything tasted delicious. The service was excellent and very attentive. The bread that was served was very tasty. There are also very good vegetarian options! The cover charge/service fee of €3 seems fair to us.
The wine recommendation with the meal was good, and overall the prices were fair!
We felt very comfortable, would gladly come back, and can recommend a visit!

The quality/price ratio could be improved. On paper, a good proposal, different from the usual, but the execution didn't live up to expectations. Nice atmosphere.

Simply amazing ⭐⭐⭐⭐⭐
I come here at least a couple of times a month, and every time it's a confirmation. La Svolta isn't your average restaurant: it's the place I go when I want to eat truly well, with the peace of mind of knowing what's on my plate.
"Cucina di Ragione" isn't just a slogan, but a sincere attention to ethics and local produce that you can taste in every bite. Here, every ingredient (all organic and from small producers) is carefully selected and transformed with extraordinary imagination.
The surprising thing is that, even though I'm not vegetarian, I almost always end up choosing their vegetarian dishes. They're creative, complete, and delicious: proof that when the ingredients are excellent and there's thought behind them, nothing else is needed.
The staff is also a guarantee: they're highly trained, always know what to recommend, and know every wine and beer on the list inside out. The price is very fair considering the meticulous attention to detail that goes into every ingredient.
A paradise for lovers of good food. Highly recommended.

La Svolta (not surprisingly in Bologna) is pure jazz, where the experience is always different. Dario and his group, with their infinite study and local research, improvise in time with seasonal products. I leave the table astonished, nourished in my soul, and the amazement no longer allows me to eat with indifference.
Every time I'm hungry, now it's a deep hunger and I dream of you!

EDIT FOLLOWING THE RESTAURANT'S RESPONSE:
The menu, when I visited, didn't clearly state that the cover charge included bread; or, if it did, it wasn't clear why it stated "cover charge: 3 euros" at the end.
Regarding the restaurant's response, I find it unconvincing. The tagliatelle were rather hard to chew, a detail that could indicate the need to reconsider the supplier or the cooking method. Furthermore, considering the restaurant's name and concept, the seasoning seemed very simple: essentially tomato, with perhaps a light soffritto.
I don't appreciate it when a restaurant responds to reviews in a rude or even provocative tone. Criticism is part of the job: it should be addressed with professionalism and a constructive spirit.
My original review:
Unfortunately, I can't give more than 3 stars.
The service is excellent: the young man serving is truly kind, and you can sense a pleasant, youthful atmosphere, from the chef to the two waiters.
A sore point right from the start: the cover charge was €3, even though there were still several free tables at 12:30.
I ordered the homemade focaccia (€3): nothing special, and I didn't understand the choice to serve a mix of bread and focaccia. If I pay for focaccia, I expect that and not additional bread.
Let's get to the main point that impacted my rating: the green tagliatelle with tomato sauce.
Unfortunately, they didn't seem up to par with Bologna, especially after eating at truly excellent osterias (some of which I've even reviewed on my profile). The tagliatelle were either too al dente or the dough wasn't quite right: I found them rather "plasticky." I'm no expert, but it could be the dough or the pasta resting. I don't even want to think they were packaged; that would be absurd for a place like this.
I also had the feeling that some items (like the cover charge) were a bit overpriced, considering that I've never paid a €3 cover charge, not even in Piazza Maggiore.
Call me cheap, but you can see from my profile that I review a lot: bistros, trattorias, fast food joints, and Michelin-starred restaurants, even in cities with millions of inhabitants. So I think I have some experience.
Overall, I wasn't thrilled with the place: I only tried a first course and, not being impressed, I didn't order a second course.

All tools on the table are washables, take away in compostable portions and boxes, artcrafts, careful service, water from the tap (but nicely filtered), low chemicals and natural soaps in the restrooms. Local food.
Also good for people looking for soft or low noise environment, not too fancy, not for "one-bite tourists"
