A dear friend lets us know he's booked this place; he comes here often and the food is great.
Charming little town, Carpineto Romano, with steep roads leading to it and breathtaking views, chestnut groves as far as the eye can see.
I arrive a little early and take a stroll around the town, very charming.
I spotted the trattoria from the signs; you wouldn't expect such an intimate and traditional place.
Along the alley, the famous Carpineto chestnuts are drying; who knows if we'll get to try them.
A typical menu, praised verbally, without paper and/or notes. We choose the fine tagliolini with porcini mushrooms and truffle. I'd been hearing about them for a long time, but I'd never had the chance to try them. They're egg tagliolini, so fine they melt in your mouth, you could eat panfuls of them, very well made. Perhaps I would have liked a little more mushrooms and not so small, but the dish overall was very good.
The bruschetta with extra virgin olive oil and lard for the appetizer arrived. After the pasta, but we're in a typical trattoria and it's still fine, the prosciutto and cheeses are also delicious.
We missed out on a meat dish, but we'll make up for it another time. Meanwhile, sautéed broccoli and fries are a must.
We're craving dessert, but what if you could make us those roasted chestnuts?
We ask, and he tells us it'll take 30-40 minutes, and of course, another bottle of Cesanese Martino V.
Meanwhile, we chat about this and that, and then they arrive. They're excellent, they seem to be the best in the area, and we take a 2 kg souvenir for home.

Excellent and plentiful dishes, very kind staff, it's a real shame that there was an interminable wait between the first and second courses due to miscommunication among the staff about the orders, which also happened with the desserts (which were excellent).

Nice restaurant in the center of Carpineto. I had excellent gluten-free pasta with porcini mushrooms and truffle. Generous portions. For my appetizer, I had very tasty cold cuts (with gluten-free bread), especially the lard. The staff was very friendly and attentive to various intolerances and allergies. When I return to Carpineto, I'll know where to go.

I was delighted to eat a dish that was actually out of place: pici all'aglione, which was absolutely delicious. The atmosphere was particularly family-friendly, and Luca and Floriana have kept up their mother's tradition, "La Sbirra," to a T. Thank you, and see you next time.
