Today, for lunch, I tried the tasting menu with four main courses. I found every aspect related to the restaurant "sublime", at the end of the meal I felt it was my duty to thank the owner (Andrea) for the experience I had just had. The level is very high, you can perceive it as soon as you set foot and you continue to perceive this sensation throughout the experience. Without a doubt it is the "best" restaurant I have ever tried, so much so that as soon as I stepped outside the door I already felt the desire to return.
FOOD
rice wafer with broccoli cream (entrée): pleasant broccoli cream, crunchy radicchio
butter (entrée): emulsified with sea water enhances the bread and breadsticks provided
red mullet (starting dish): the red mullet (deboned) goes well with the potato cream, while the olives give the required touch of flavor
spaghetti with seafood (first course): large quantity of fish inside the pasta, perfect cooking, the sea urchin can be seen and heard a lot, the parsley oil refreshes
the fish from the port of Anzio (second course): accustomed to the classic fried fish, I expected crunchiness, but instead I was positively surprised by the softness of the frying. Furthermore, the fish inside was moist and not dry. The three sauces (coffee, pumpkin, beetroot (?)) pair perfectly with the frying.
ice cream: cleans the palate of fish, preparing it for dessert
under the ground (dessert): excellent meal closure. The pumpkin jam is excellent, the crumble gives the dish the necessary crunchiness
SERVICE
fast, attentive, minimal waiting between one dish and another. Andrea is already worth the cost of the meal, he is charismatic and entertainer, you can immediately perceive the passion he puts into his restaurant
ENVIRONMENT
the photos speak for themselves: a renovated former convent. The room in which we had lunch has been completely renovated recently, there is a lot of privacy, no noise, there is no chaos, it is elegant, well-kept, splendid.

Newly renovated place: both in furnishings and in the cuisine. We tried the 5-course tasting (which can be chosen by the customer or you can rely on the chef): red mullet, fried fish, spaghetti with seafood, fish from Anzio and burnished gentian cream with liquorice ice cream. Dishes prepared with care and taste. The environment is intimate and welcoming. Impeccable staff. The wine list is also excellent.
