I bet you've never eaten a pizza like this!!! We happened upon this pizzeria in Fontanellato by chance, after visiting the Rocca. What we found in this restaurant/pizzeria is comparable to Parmigianino's masterpiece; however, the artist, in this case, is called Enzo; or rather: Cavalier Vincenzo Carmine De Santis who, with his mastery in preparing pizza, honors what is called "white art" and brings the name of Italy high in the world. Enzo explained to us that he uses quality raw materials and possibly local, such as the flour that comes from the Molino Figna in Collecchio; he uses little yeast in the dough, but lets it rise for a long time, so as to make it light and digestible. What we appreciated most was the crunchiness of the dough, good and crumbly until the last bite. We have only one regret: not living nearby to be able to come here every now and then to taste this delight. We will definitely be back next time we come to Tabiano for spa treatments. Thanks Enzo!
