Delicious food. The restaurant's story begins just a few steps from Campo de' Fiori, in Piazza della Pace, where his great-grandfather worked as a carbonaro, a coal merchant. Meanwhile, his great-grandmother opened the first restaurant of its kind in 1912, and thus La Carbonara was born.
Over 100 years of family history, now in its fourth generation.

Here's the thing, everything about this place was great except for two things:
1. They use penne for the carbonara and
2. The pasta was entirely too al dente
Located in a beautiful square that has a market during the daytime, the view from the first and second floor is beautiful at night. During the day, the square is full of vendors and tourists buying all their souvenirs. At night, kids are running around playing games and tour groups are meeting up to start their adventure.
This was on our list of must visit while we were in town. We walked around the area and made sure to be back by 7 PM when they opened. There were only about three groups of diners when we got there right when they opened. We were quickly seated right by the corner despite not having a reservation. Win!
It was our first full day in the city and we had just walked 8 miles so our group of 4 had a ravenous appetite. Of course, we all decided to each get an order of the carbonara and then share a few other items. Much to our surprise, they don't use spaghetti. And another smack in the face is how al dente the pasta was. To the point that we didn't want to keep eating. The chewing was too much. It actually put me in a bad mood. This, even though the bacon that was in there was so good. I think that was the best part of the dish otherwise we were all very disappointed..
However, the trio of meat was banger. The ravioli was also fantastic.
We soon found out that all the pasta we would proceed to have for 3 days in Rome was ALL al dente. Not the vibe.

Unfortunately I didn't have a positive experience in this restaurant, the appetizer (zucchini flower and artichoke alla guidia) I must say was tasty, the first course I had, the carbonara, was absolutely not up to par, I found the pasta overcooked, not very tasty, not enough pecorino, egg not well creamed, I couldn't finish it because I didn't find it appetizing, too much for the price (16 euros)
