Had lunch on New Year's Day with friends.
An environment that reflects the name, a sort of "cave" with brick arches and some curious details. Overall it is welcoming, perhaps a little small on busy days.
We ordered appetizers of mixed platters, bruschetta, cured meats, cheeses and fried food. All very tasty and varied. Maybe I would have liked some mozzarella to tone down the saltiness, but you can't complain.
First course: Tonnarelli alla Viterbese.
Absolutely recommended for its uniqueness and flavor, the fennel note was a plus. Very generous in quantity (maybe I would have put a little less to leave room for the desserts).
The second course is a sliced beef with porcini mushrooms. Excellent and well cooked meat, tasty mushrooms. Also in this case the portion is very generous.
All accompanied by an excellent house red wine, 10 euros for 1 lt. it's a must have.
Friendly and professional staff.
Bill: some items increased due to the day of celebration, but according to the regular menu, excellent prices in proportion to the quality and quantity of the food offered.
Absolutely recommended!

Word of mouth from a friend of mine recommended this restaurant to me on New Year's Eve and I and my friends were certainly not disappointed.
90s trattoria a few meters from the beating heart of Viterbo: don't focus on appearances.
Dishes with generous and delicious portions. I absolutely recommend the starter for 2 people, plentiful and quality. As a first course I took the tonnarelli with Viterbo ragù which, for those who don't know like me, is a sausage ragù with fennel, very good and abundant.
Super house wine: good and very honest price (1l €10).
The only slightly negative note was the owner who we saw repeatedly scolding the waitress who was doing her best to serve the tables (the place was full as it was a party). We felt sorry for her, we hope that next time she will be more understanding.

LOCATION: small venue but with a good seating capacity. Very pretty with stone walls and arches.
MENU: we had dinner on December 31st so there was a specific menu for the evening, but you usually found traditional dishes from Lazio and Rome.
We had an appetizer to share which included various cold cuts, cheeses and croutons, simple and good. I ate tonnarelli alla Viterbo, a full-bodied and delicious sauce. My friends, on the other hand, had the Roman strips and the lemon scallop, both good.
Generous portions!
SERVICE: a little slow to take the order, but then it was fast in serving the dishes.
BILL: very cheap for the quantity of dishes offered.
I recommend booking as it is small.

Excellent restaurant, with typical Viterbo cuisine. The pappardelle with wild boar was truly a spectacle as was the fillet with porcini mushrooms.

Found on Google by chance.
The intention was to have a fixed menu at 20 euros including water, coffee, wine, covered with a first and second course but we wanted to try typical cuisine but they weren't included in today's menu!
I got a mix platter for 15 euros with very good cured meats, a bit of a shame about the salami and provola cheese; the latter of good quality but we would have preferred a mature cheese. The best thing is melt-in-your-mouth raw ham and bruschetta!
The space starters: tonnarelli alla pajata di veal and lombrichelli alla Viterbo... delicious! The very soft veal and the sweet sauce; good lombrichelli if you like fennel! I say we made the slipper.
For the food we would like to give 4.5 stars but Google doesn't allow it!
Coffee at the end.
Mrs Annamaria was very kind, a wonderful welcome.
Spent 45.50 euros for two.
We would stay here again if it happened again!

The Buca di San Faustino is always a confirmation. We come back every time we pass through Viterbo because it has an unbeatable quality-price ratio. The service is fast and the environment is rustic but welcoming and in line with the traditional dishes offered. The portions are super generous, and if you take the fixed menu at €20 (first course, second course and side dish) you will leave really full. Recommended dishes: sliced with porcini mushrooms (spectacular!); pappardelle with wild boar ragù; fettuccine with porcini mushrooms; mixed grill; chicory. Just to mention the best ones. Unfortunately I can't post photos because I didn't have time, the dishes went away in a flash! We highly recommend making a stop here 😊
