Whenever we're in the area, we can't help but come here for dinner... Excellent hospitality followed by service that can recommend food/wine/beer pairings! I love the Norcia pizza, but the fish is cooked beautifully, including the fried fish!! Highly recommended.

At Il Rifrullo in Marina di Bibbona, pizza isn't simply a craft: it's a declared act of identity. You can tell right away, even before tasting, by looking at the counter in front of the oven, where a row of pizza cups speaks volumes about the talent of pizza chef Ivan. In 2025 alone, he's won four first prizes: not by chance, but rather the confirmation of a clear and consistent vision.
The schiaccina I'm served is, on paper, a "naked" pizza: cooked, cut in half, and topped only later. In reality, it's a sensorial manifesto. Tuscan pecorino, spicy salami, broccoli rabe, and sun-dried tomatoes: a few carefully chosen ingredients, intelligently orchestrated.
At the first bite, a clear and pleasant sound arrives: that crunch that promises and delivers. Immediately afterward, the vibrant acidity of the sun-dried tomatoes takes hold, in close dialogue with the saltiness of the pecorino. Then, with a firm yet elegant pace, the bittersweet notes of the broccoli rabe enter, followed by the trigeminal sensation of the spicy salami, timely but never invasive.
It's a perfectly balanced crescendo, an apotheosis of taste and aroma that demonstrates how technique and sensitivity can coexist without ever overlapping.
It's impossible not to think of wine: the natural pairing is a Ciliegiolo vinified as a rosé from Tenuta Aquilaia (DOC Maremma Toscana). An almost "incestuous" encounter, so territorial and coherent, and precisely for this reason, difficult to forget.
One thing is certain: this schiaccina isn't ordered just once. You order it again, and again. Because great pizzas, like well-told stories, leave their mark.
