Sitting at Il Profumo della Freschezza means entering a world where every ingredient has a story, every dish a soul, and every flavor a connection to the earth.
We begin with a fermented garden aperitif, a fresh caress that opens the palate. Next comes the garden gazpacho, velvety and lively, with toasted seeds and the delicate aroma of lemongrass: a sip of summer in every spoonful.
The journey continues with the surprising watermelon carpaccio, served with zucchini spaghetti and a sweet and sour onion dressing, soy kefir tzatziki sauce, and balsamic vinegar reduction. Freshness, sweetness, and acidity meet in perfect balance.
The homemade vegetable bread speaks of the time and care of natural leavening, while the zucchini, pepper, and eggplant pie, wrapped in a Mammarossa béchamel sauce and a fermented cashew and almond sauce with soy kefir, is pure plant-based comfort food.
The chickpea farinata with summer vegetables and kohlrabi, on a cream of beetroot and vegetable gratin, is a tribute to the countryside: bold flavors, intense colors, uncompromising authenticity.
And to finish, a garden fig ice cream, enriched with shortcrust pastry crumble, rose syrup, and fresh fruit salad... a dessert that tastes like a garden in bloom.
All this is accompanied by an infusion of garden herbs and flowers, a relaxing sip that seems to stop time.

Great place!
We were there on Sunday for the tasting menu which was delicious and beautiful. The staff is very welcoming and friendly. The food is all plant-based and made from ingredients grown on their own farm.

We were in this estate on Easter Monday, visiting that place is an exciting experience, everything is extremely well looked after, respect for nature at the highest level, Renato's nephew (the one who designed everything) explained their philosophy to us: fascinating. You can eat at their vegan restaurant, delicious food even for those who don't like vegan cuisine. There is the possibility of picking fruit and vegetables or buying them in their shop where everything respects the environment and people. If you want to spend a day to regenerate body and mind, HIGHLY RECOMMENDED!!
