There are many culinary proposals that boast the title (now almost “noble”) of typical Tuscan cuisine, not only in the historic centers of the main cities. Perhaps too many. Often, in fact, there are two or three dishes that truly respect tradition (let's face it: it is the cuisine that descends from our grandmothers and their mothers), but for the rest there is an abyss between what we natives have imprinted in our sensory consciousness and what is served to us on the plates.
Here at Maialetto, however, each single course generates in those who grew up with this cuisine such a powerful elastic effect that it takes them back to childhood and pampers them as their family did, just like in the film Ratatouille.
Another thing: Tuscan cuisine is often very tasty, dense and full-bodied (it is no coincidence that it requires unsalted bread). These characteristics, if managed by inexperienced chefs, sometimes end up flattening the sensations on the palate - you do not perceive any defects, but not even the nuances. Here at Maialetto I have never had that feeling of “equally good” between the various components of the dishes. Each element is recognizable: the oil is good and you can taste it, each ingredient has its dignity in the mouth and is integrated without ever overwhelming the others – whether it’s tongue, tartare, crostoni or those special dishes that only the luckiest have been able to taste, because (rightly) linked to the seasonality of the ingredients.
I can’t wait to go back, as well as all the people I’ve brought here over the course of twenty years (some of whom are really veeeery hard to please).

Locale molto accogliente, prima volta in questo ristorante... abbiamo mangiato dell antipasto di salumi di loro veramente molto buoni, tartara eccellente maialino buonissimo e la loro rosticciana x finire un buon dolce...che dire veramente tutto ottimo qualità prezzo ottimo personale molto gentile, ci torneremo complimenti.

La patria della Ciccia della Val di Nievole, nella storica Macelleria del 1930. Carnì di Allevamento selezionato da decenni, frollata da 2 a 4 settimane. Salumi di produzione propria. Buonissimo il tagliere di salumi così come i crostini ed i carciofi fritti. Ottimi i pici, la farinata di cavolo nero, il maialino da latte e sopratutto la loro Fiorentina di Razza Limousine. Ottima carta dei vini, prezzo corretto.
